We selected and harvested the grapes from the most suitable part of the vineyard in Contrada Sciaranuova, covering approximately half a hectare. The clusters were pressed and entirely fermented in a 25hl Slavonian oak barrel at a controlled temperature. Here, after fermentation was completed, the wine “rested” and evolved on its fine lees for a year.
