From the young one hectare grapevines of the Rampante contrada on Mount Etna, this is our interpretation of Chardonnay. Our challenging yet intriguing idea led us to vinify this celebrated international grape on the slopes of Etna. We produce 5000 bottles, aged in french oak.

  • Soil: terrace cultivations on volcanogenic sediments

  • Elevation: 740 meters above sea level
  • Vineyard exposure: North
  • Training system: espalier
  • Pruning system: spurred cordon
  • Vines per ha: 4.250
  • Yields per ha: 58 t on average
  • Harvest period: August 30th
  • Fermentation: in 300 lt French oak barrels
  • Fermentation temperature: 16-18°C
  • Duration of fermentation: 12 days
  • Malolactic fermentation: not developed
  • Aging: in French oak barrels
  • Alcohol content: 13% Vol.
  • Wine analytical data: pH 3,46 – TA 6,63 g/l – RS 0,7 g/l – ET 22,7 g/l
